Food plays a big role in global emissions, with the worldwide food system currently accounting for 30% of greenhouse gas emissions. That is why our catering partner Levy aim to be the market leaders in sustainable food; delivering locally sourced, plant forward and in-season menus. They call it their ‘recipe for change’ which involves:
- Locally sourced and seasonal ingredients
- Balance plate menus
- Rebalancing protein sourcing
- Offsetting residual emissions
Events for Change
Nutritious catering is a vital part of any great meeting or conference, so you’ll have the chance to choose a delicious, sustainably conscious menu with the help of an event manager and our culinary team. From salad platters to hot buffets, our team will prepare healthy dishes that suit the dietary requirements of every delegate and that are good for the planet too.
Our menus are colour-coded like a traffic light to show you the carbon score of your meals. Dishes with a label value of 'A' indicates a very low carbon rating, whilst 'E' indicates dishes with a very high carbon rating.
This means the dish has been calculated by FoodSteps to help you make a better decision for you, and the planet.
Meetings & Banquets for change
We know you want to do the right thing, but that’s not always easy! That's why we've launched Meetings for Change and Better Banquets.
What this means for you is that when you book a Lime Venue Portfolio venue, you are making a good choice that can make a difference.
All our member venues will, as standard, offer our key sustainability priorities as part of our Climate Promise.
- We believe in using fresh, seasonal ingredients.
We prioritise British and seasonal produce. We have banned air freight. - We believe in zero waste.
Whatever we’re cooking for your meeting or event our approach is root-to-stem, nose-to-tail. All our packaging is recycled and reusable. - We believe in ethical sourcing.
All meat is sourced from the UK&I. All our fish is MCS 1-3. Our teas and coffees come from responsible suppliers. Our chocolate is Fairtrade and Rainforest Alliance certified. - We believe in the power of plants.
Our menus are always plant-forward, with a choice of great-tasting alternative proteins. 60% of our menus are vegan, vegetarian or plant-forward. All our desserts are plant based. A plant-forward recipe prioritises plant ingredients (e.g. fruit, vegetables, legumes and grains) but doesn’t necessarily eliminate all animal-based foods.
At least 50% of what would typically be an animal ingredient, will instead be a plant ingredient. For example, the 120g of chicken in a typical chicken pie, is instead 60g chicken, 60g mushrooms. - We always offer Lo & No and sustainable alcohol options.

Our menus display carbon footprint information to highlight how our eating habits impact the climate and to help everyone make informed food choices. Partnering with Foodsteps, we use their leading database to scientifically measure the carbon footprint of each dish, considering ingredients, origin, and production methods. Their A-E rating system identifies low to high carbon dishes, with 'A' being the most planet-friendly.

Levy work with selected partners and suppliers who focus on reducing emissions and food waste across their supply chain. These organisations are putting people and planet first. With their help Levy can continually create eco-friendly dishes for meetings, events and celebrations at Leicester Tigers.
